Sort of a mini cordon blue burrito, double up for family meals, Learned from my Mom and continue to serve to my kids. A little ranch for dipping on the side is good too. Ingredients:
1/4 cup chopped onion |
1/4 cup margarine or 1/4 cup butter |
2 tablespoons parsley flakes |
1/8 teaspoon pepper |
1/2 teaspoon poultry seasoning |
1 cup saltine, crushed (approx 25) |
1/4 cup water |
1 egg (scramble) |
1 1/2 cups chopped chicken |
1/2 lb mild cheddar cheese (grated) |
6 slices ham |
Directions:
1. Saute onion in margarine/butter until tender. 2. Add parsley flakes, seasonings, cracker crumbs, water, egg, chicken, cheese [save some for topping] and mix well. 3. Place large spoonful on mix on center of each ham slice, roll up ham [like open ended burrito] should look like mini enchiladas. 4. Cover with remaining cheese. 5. Place in square baking dish and bake at 350 for about 30 minutes. |
