A twist on Olive Garden's soup, customized to a more hearty level. Serve with biscuits. This soup is a favorite of my house and made several times a month by request! Ingredients:
1/3 cup olive oil |
2 cloves garlic, minced |
1 pound chicken, cut into bite-sized pieces |
1/3 cup flour |
1/2 cup shredded carrots |
1 stick celery, chopped |
1/2 cup chopped spinach |
2 1/2 cups milk |
1 1/2 cup heavy cream |
3 chicken bullion cubes |
17 oz gnocchi |
salt and pepper (to taste) |
Directions:
1. On medium heat, cook chicken and garlic in a large pot in olive oil until cooked through. 2. Stir in flour and mix well until flour is cooked into the chicken. 3. Add rest of ingredients, except for the gnocchi. 4. Allow to thicken on medium heat. 5. Add gnocci (cooked according to package directions, unless it's homemade gnocci). 6. Lower heat and allow soup to simmer until thickness preference! |
