Chicken and Garbanzo Bean Salad |

I found this in the BH&G cookbook and it sounds good. Ingredients:
2 cups cubed cooked chicken |
1 (15 ounce) can garbanzo beans, drained |
1 cup cubed cheddar cheese or 1 cup monterey jack cheese |
2 stalks celery, sliced |
1 small green pepper, chopped |
2 green onions, sliced |
1/2 cup mayonnaise or 1/2 cup salad dressing |
1/2 teaspoon chili powder |
1/4 teaspoon garlic powder |
1/4 teaspoon salt |
1/4 teaspoon pepper |
1 medium tomato, cut into wedges |
1 leaf lettuce |
Directions:
1. In a medium bowl combine chicken, garbanzo beans, cheese, celery, green pepper and green onions. 2. For dressing, stir together mayonaisse, lemon juice, chili powder, salt and pepper. Stir into chicken mixture. Cover and chill for 2-24 hours. Before serving, stir mixture. Serve on lettuce lined plates. Garnish with tomato wedges. |
