From my mother's recipe box. Good stuff! Ingredients:
3 -4 lbs whole chickens |
2 1/2 cups self rising flour |
2 eggs |
1 cup skim milk |
1/2 cup green onion, chopped |
4 tablespoons oil |
1 tablespoon salt |
1 tablespoon sage |
1 tablespoon pepper |
1 tablespoon parsley |
Directions:
1. Boil and bone chicken (keep broth chicken was boiled in). 2. Mix together flour, eggs, milk, chopped green onions, oil, salt, sage, pepper, and parsley. 3. Roll mixture out to 1/4 inch and cut in strips. 4. Drop in broth and boil 20 to 30 minutes. 5. Put chicken in pot in small batches. 6. Simmer for a few minutes and serve hot. |
