Boiled chicken with homemade dumplings as My Cousin Janis made for me Ingredients:
1 whole chicken |
2 cups flour |
1 teaspoon salt |
1/2 teaspoon baking powder |
1/2 cup lard (cold) or 1/2 cup shortening (cold) |
1 egg |
1/2 cup sweet milk |
yellow food coloring |
Directions:
1. Mix flour,salt, baking powder and lard in a large bowl. 2. In a smaller bowl beat egg, milk and food coloring well. 3. Add to flour mixture and knead until no longer sticky. 4. Cut into 3 pieces, roll out and cut these into squares. 5. Add to broth. 6. Boil one whole chicken in 2 1/2 quarts broth and water. 7. remove chicken and let cool. 8. debone. 9. Add chicken to dumplings and continue to boil. |
