Ingredients:
1 lb chicken breast, boneless, skinless, raw cut into 1-inch cubes |
1 lb mixed vegetables, frozen, of choice |
1 medium onion, diced |
2 (12 ounce) cans chicken broth, divided |
1 1/2 cups low-fat buttermilk biscuit mix |
Directions:
1. Combine chicken, vegtables, onion, and broth (reserving 1/2 C plus 1 TBS broth) in slow cooker. 2. Cover, cook on high 2 hours. 3. mix biscuit mix with reserved broth until moistened, drop by tablespoonfuls over hot chicken and vegtables. 4. Cover. Cook on high 10mins. 5. Uncover, cook on high 20 mins more. |
