Chicken And Dressing Soup |

I love the soup we make after Thanksgiving using the carcus, it has all the flavor of the dressing. This has those flavors... Ingredients:
3 c. water or broth |
1teaspoon chicken soup base |
1 quartered onion |
1 bay leaf |
1/4 c. fresh chopped parsley |
1/4 c. chopped fresh celery leaves |
1 chicken breast |
1 c. diced celery |
1 c. chopped onion |
2 t. butter until soft. |
3 c. cubed fresh white bread |
1 t. sage |
1 t. black pepper |
1 t. poultry seasoning |
2 tab chicken bouillon |
2 cups evaporated milk |
Directions:
1. Cook chicken in water or broth with seasonings until tender. Remove, chop meat, strain and reserve liquid. 2. Saute celery and onion in butter until soft, add bread cubes 3. Add rest of seasonings 4. Simmer 15 minutes over low heat... 5. Add milk reheat to the simmer. Thin with water if to thick. 6. Taste and adjust seasonings. 7. Serve with a sprig of parsley. |
