A take off on pizza. Ingredients:
1 1/4 cups flour |
3/4 cup cornmeal |
1 teaspoon baking powder |
3/4 teaspoon salt |
1/4 teaspoon baking soda |
1/2 cup butter |
1/2 cup sour cream |
2 cups cooked chicken |
1/2 cup celery, chopped |
1/2 cup corn or 1/2 cup peas |
1/4 cup mushroom |
1/4 cup pimiento, chopped |
1 1/2 cups breadcrumbs |
1 tablespoon onion, chopped |
1/4 teaspoon poultry seasoning |
1/8 teaspoon salt |
1/8 teaspoon pepper |
2 tablespoons butter, melted |
2 tablespoons hot water |
Directions:
1. For Crust: Combine in mixing bowl flour, cornmeal, baking powder and salt, and baking soda. 2. Cut in butter until mixture is the size of small peas. 3. Add sour cream, a little at a time, stirring with fork until dough is moist enough to hold together. 4. Form into a ball. 5. Press onto bottom and sides of 12-inch round pizza pan. 6. Bake at 375°F for 15 minutes. 7. Top with filling. 8. Sprinkle with topping. 9. Bake 15-20 minutes until golden brown. 10. Chicken Filling: Combine all ingredients; blend well. 11. Topping: Combine all ingredients except butter and water. Mix. |
