southern cooking at its best Ingredients:
3 cups crumbled cornbread |
1/8 teaspoon black pepper |
1 cup minced onion |
1/2 cup melted butter |
2 1/2 cups cooked chicken, cut in pieces |
1/2 teaspoon salt |
1 cup chopped celery |
1/4 teaspoon salt |
1 cup milk |
1 tablespoon melted butter |
1 tablespoon flour, rounded |
2 cups chicken broth |
1 egg, well beaten |
Directions:
1. Preheat oven to 375 degrees. 2. Toss together in a bowl the corn bread, 3. celery, 1/2 t salt, onion, pepper, and 1/2 c melted butter. 4. Spread in buttered casserole dish and arrange chicken 5. evenly over the top. 6. In a skillet, heat the tablespoon melted butter, 7. flour and salt. 8. Blend well and stir in broth. 9. Stir until smooth. 10. While heating this, combine egg and milk; add to sauce. 11. Cook until sauce thickens slightly and pour on 12. top of chicken. 13. Bake approx 45 minute. |
