A popular party starter, this nourishing chowder is quick and easy to prepare. Ingredients:
1 1/2 cups corn (frozen, canned, or fresh) |
4 medium potatoes, chopped into bite size bits |
2 cups chicken, cooked and shredded |
4 cups chicken broth |
1 1/2 cups coconut milk |
Directions:
1. Cook potatoes in chicken broth until tender, but not mushy. Add corn and cooked chicken and bring to a boil. Remove from heat, add coconut milk, and serve immediately. |
