Chicken and Cilantro Bites |

A tasty little appetizer, easy to make, easy to eat. Great for BBQs or pool-side. Ingredients:
1/4 cup soy sauce |
1/4 cup rice vinegar |
1 lb ground chicken |
1 large egg |
1/2 cup cilantro, finely chopped |
2 scallions, finely chopped |
2 teaspoons asian sesame oil |
1 teaspoon salt |
3/4 cup cornstarch |
1/2 cup oil |
Directions:
1. Stir soy and vinegar together for a dippins sauce; set aside. 2. In mixing bowl, add ground chicken, egg, chopped cilantro, scallions, sesame oil and salt. 3. Spread cornstarch in a shallow baking dish 13 x 9 inch. 4. With wet hands, form chicken mixture into 1 inch balls. 5. Roll in cornstarch. 6. Heat oil in a heavy skillet. 7. Cook the chicken balls in hot oil 2-3 minutes until browned. 8. Serve with dipping sauce. |
