Chicken and Chickpea Fattoush

Fattoush means moistened bread, and in this case, it's pita bread. The addition of chicken and chickpeas transforms this cool Lebanese salad into a complete summer meal.
Ingredients:
1/2 cup fresh lemon juice
1/4 cup olive oil
2 teaspoons dijon mustard
1/2 teaspoon salt
1/2 teaspoon black pepper
2 garlic cloves, crushed
6 cups chopped romaine lettuce
1 1/2 cups shredded rotisserie chicken breast
1 cup chopped english cucumber
1 cup halved cherry tomatoes
1/4 cup chopped red onion
1/4 cup chopped fresh mint
1/4 cup chopped fresh flat-leaf parsley
2 (6-inch) multigrain pitas, torn into bite-sized pieces
1 (16-ounce) can chickpeas (garbanzo beans), rinsed and drained
Directions:
1. Combine first 6 ingredients in a large bowl, stirring with a whisk. Add romaine lettuce and remaining ingredients; toss gently.
