Chicken and Celery Casserole |

This is one of my favorite chicken casserole recipes. Note the preparation time does not include cooking the chicken. Ingredients:
2 cups cooked chicken breasts (bite size pieces) |
2 cups thinly sliced celery |
1/2 cup slivered almonds |
2 tablespoons lemon juice |
1 cup mayonnaise |
1/2 cup sour cream |
1/2 cup grated sharp cheddar cheese |
1/2 teaspoon salt |
1 cup potato chip, crushed |
1/2 cup grated sharp cheddar cheese |
1/2 teaspoon paprika |
Directions:
1. Mix together all ingredients except the last three (potato chips, cheese and paprika topping). 2. Pour into a lightly greased casserole dish. 3. Sprinkle potato chips, cheese and paprika over the casserole. 4. Bake at 350 for about 30-45 minutes, or until bubbly. 5. Can be prepared a day ahead and refrigerated. 6. Sprinkle on the topping right before baking. |
