Chicken and Bulgur Skillet |

Ingredients:
vegetable cooking spray |
1 teaspoon vegetable oil |
1 (3 1/2-pound) broiler-fryer, cut up and skinned |
3 cups canned no-salt-added chicken broth |
1 cup frozen chopped onion, celery, and pepper blend |
1/4 teaspoon salt |
1/4 teaspoon pepper |
1 1/2 cups bulgur (or cracked wheat), uncooked |
1/2 teaspoon dried italian seasoning |
Directions:
1. Coat a nonstick skillet with cooking spray; add oil. Place over medium-high heat until hot. Add chicken, and cook 4 minutes on each side. Add broth and next 3 ingredients to skillet. Bring to a boil; cover, reduce heat, and simmer 15 minutes. Stir in bulgur and seasoning. Cover; cook over low heat 15 minutes or until chicken is done, bulgur is tender, and liquid is absorbed. |
