Chicken and Broccoli With Noodles |

This recipe is from Barbara Cousins' Cooking Without Made Easy. This collection of recipes is free from gluten, sugar, yeast and dairy, and yet we are eating such wonderful, tasty food. I am using so many recipes from this book, and just had to post the few that have become favourites so quickly. I find 100g of rice noodles is plenty for us. We also split it in thirds, not just in half. It fills a big skillet/pan. The author says In this recipe, the chicken, vegetables and noodles sit in a soup-like sauce that is absolutely delicious. Use a spoon to eat it or mop up the juices with crusty bread, if acceptable. There are countless variations on this recipe - try other vegetables, add some prawns with the chicken or use duck or beef. I add a bit of rice flour to thicken it. Enjoy. Make it your own. Ingredients:
2 chicken breasts |
1 bunch spring onion |
2 inches fresh ginger |
2 garlic cloves |
1/2-1 red chili pepper |
1 tablespoon olive oil |
285 ml coconut milk |
425 ml chicken stock |
1 tablespoon lemon juice |
1 tablespoon tamari (optional) or 1 tablespoon fish sauce (optional) |
4 kaffir lime leaves |
1/2 red pepper |
1 small courgette |
225 g broccoli |
250 g buckwheat noodles or 250 g rice noodles |
salt and pepper |
1 tablespoon chopped fresh coriander |
Directions:
1. Cut the chicken breasts into bite-sized pieces and the spring onions into 1 lengths. Finely slice half the ginger and grate the rest. Press the garlic cloves and finely dice the chilli. Sweat all these ingredients in the olive oil until the chicken changes colour. (NOTE: Sweating is cooking over low heat, not sauting, browning or frying. It can take up to 20 minutes.). 2. Add the coconut milk, stock, lemon juice, tamari or fish sauce and the kaffir lime leaves. 3. Cut the red pepper and courgette (zucchini) into slices and break the broccoli into florets. Add these to the pan with the noodles. Bring to the boil and simmer for approximately 10 minutes or until the chicken, vegetables and noodles are cooked. Remove the kaffir lime leaves and season to taste with salt and pepper. Serve in large bowls, garnished iwth the coriander. |
