Chicken, broccoli, snap peas, and cashews in a stir-fry
Ingredients:
24 ounces skinless chicken breasts
4 cups broccoli
2 cups fat-free chicken broth
12 ounces sugar snap peas
6 tablespoons reduced sodium soy sauce
4 medium green onions
8 cups brown rice
1/2 cup cashews
Directions:
1. Cook chicken in fat free sprayed skillet.
2. Add broccoli chicken broth.
3. Add snap peas, onions, soy sauce.
4. Serve over brown rice.
5. Garnish with cashew pieces.
