Chicken and Broccoli Quiche |

Ingredients:
2 cup(s) chicken, cooked and shredded |
10 ounce(s) frozen broccoli, thawed and drained |
1 1/2 cup(s) mozzarella cheese |
1/2 cup(s) onion, diced |
3 eggs |
3/4 cup(s) half-and-half |
11/2 tablespoon(s) fresh lemon juice |
1 teaspoon(s) salt |
1/2 teaspoon(s) pepper |
oil, for sauteeing |
1 pie pastry shell, unbaked |
Directions:
1. Preheat oven 375. Sautee onions in oil until almost tender. Cook broccoli. If fresh, remove stems and microwave 3-5 minutes. Drain well and chop. Arrange broccoli and onions in pastry shell, then layer with chicken and cheese. In separate bowl, beat eggs, cream, lemon juice, salt, and pepper until combined. Bake at 375 for 35-40 minutes. Serving same day: let quiche cool at least 30 minutes to set. If freezing wrap with plastic wrap and then foil. When serving thaw quiche and place in oven at 325 for 20-30 minutes. |
