This is a quick fix on a busy night. Ingredients:
2 teaspoons olive oil |
3 garlic cloves, mince |
1 lb chicken, cut into 1-inch pieces |
1 teaspoon thyme |
1/2 teaspoon salt |
1/4 teaspoon pepper |
2 cups broccoli florets |
1 1/2 tablespoons cornstarch |
1 1/2 cups chicken broth, divided |
2 cups brown rice, cooked and kept hot |
Directions:
1. Saute chicken and garlic in oil. 2. Add broccoli and 1 1/4 cups broth. Simmer until almost cooked. 3. Dissolve cornstarch in remaining 1/4 cup broth. 4. Add cornstarch mixture to the skillet and bring to a boil. 5. Reduce heat and simmer until thickened. |
