chicken and bok choy soup Ingredients:
2 cups canned chicken broth (99% fat-free) |
4 cups shredded bok choy or chinese cabbage |
1 cup chopped scallions |
1 tbsp grated ginger |
3 cloves garlic (pressed or minced) |
2 tbsp lemon juice or lime juice |
1 lb cooked chicken breast (cubed) |
1 medium tomato, seeded and chopped |
Directions:
1. heat 1/4 c chicken broth 2. add ginger and garlic, cook for 2 minutes stirring constantly 3. add remainder of chicken broth and simmer 3 minutes 4. add scallions, lemon juice, bok choy and tomato 5. simmer 3 minutes 6. add cooked chicken and cook til heated through |
