Chicken and Black Bean Salad |

From the Cancer Survival Cookbook. Colorful salad with southwestern flavor. Quick and really easy. Ingredients:
2 (15 ounce) cans black beans, drained |
4 skinless chicken breasts, without skin, cooked and diced |
1/2 cup diced red bell pepper |
1/2 cup frozen corn |
1 cup diced celery |
1/2 cup finely chopped green onion |
1/4 cup chopped cilantro |
1/2 cup salsa |
Directions:
1. In a large bowl, combine drained black beans, cooked chicken, red pepper, corn, celery, onions, and cilantro. Stir in salsa. Cover and chill. |
