Chicken and Black Bean Burritos |

As the weather warms up I am always on the lookout for healthy meals that I can make using very little cooking time. This uses precooked chicken that is warmed in the microwave. You can use precooked brown rice or minute rice. Ingredients:
2 cups cooked brown rice |
2 cups shredded cooked chicken |
1 (15 ounce) can black beans, drained and rinsed |
1 cup salsa |
2 teaspoons chili powder |
1/4 cup chopped fresh cilantro |
1 tablespoon lime juice |
8 whole wheat tortillas |
1 cup shredded cheddar cheese |
Directions:
1. In a microwavable bowl combine chicken, beans, salsa and chili powder. Cook on high for 2 minutes or until hot, stirring at least once. 2. Put the warm cooked rice in a bowl and stir in the lime juice and cilantro. 3. Heat your tortillas as directed on the package, put 1/2 cup chicken mixture, 1/4 cup rice mixture and 2 tablespoons cheese down the middle of each tortilla. Roll up and serve with more salsa and maybe some sour cream. |
