A superb combination of crisp greens coupled with tastey berries and grilled chicken mixed with a classic honey mustard dressing. A summertime family favorite! Ingredients:
1 lb boneless, skinless ckn breasts cut in half |
8oz sugar snap peas |
1/4 c cider vinegar |
1/2 c raspberries |
1/2 c blueberries |
1 c finely cut strawberries |
1/2 c browned pecans |
1 pack honey mustard salad dressing powdered mixture (.75 oz) |
1/2 c vegetable oil |
8 c mixed greens |
2 tbsp orange juice |
Directions:
1. Make the honey mustard mixture as directed on the package in a medium-sized bowel (combining oil and vinegar, and orange juice in the place of water). When you are finished, set it to the side. 2. Set the grill at high. 3. Put a light amount of oil on the grate of the grill and cook chicken on each side until juices come out clear (usually between 6 and 8 minutes). When finished, remove from grill and cut cooled meat into strips. 4. Combine the mixed greens, chicken, pecans, berries and peas. Stir in the honey mustard dressing, and toss. |
