Chicken and Bean Burritos |

A somewhat light take on burritos Ingredients:
2 teaspoons olive oil |
1 lb chicken breast, cut into strips |
1 onion, diced |
1 garlic clove, minced |
1 teaspoon chili powder |
1/2 teaspoon cumin |
1/4 teaspoon salt |
1/8 teaspoon pepper |
1 cup black beans, drained |
4 whole wheat tortillas |
cooking spray |
1/2 cup low-fat cheddar cheese, shredded |
1/2 cup low-fat sour cream |
Directions:
1. 1. Heat oil in a frying pan. 2. 2. Add the chicken, onion, garlic, chili powder, cumin, salt and pepper. Saute until chicken is cooked through. 3. 3. Add beans and cook another 2-3 minutes until heated. 4. 4. Fill tortillas with chicken and bean mix, top with cheese and wrap. 5. 5. Spray tortilla with cooking spray and heat in frying pan for 1 minutes per side. 6. 6. Serve with sour cream. |
