Chicken and Basil Sausage Patties |

Chicken thighs make for moist, flavorful sausage; grind skinless, boneless thighs in a food processor. Combine the ingredients with your hands. Ingredients:
1/4 cup chopped fresh basil |
1/4 cup (1 ounce) grated fresh parmesan cheese |
3 tablespoons dry white wine |
1 teaspoon salt |
1 teaspoon dried rubbed sage |
1/2 teaspoon ground cumin |
1/2 teaspoon ground coriander |
1/2 teaspoon freshly ground black pepper |
2 pounds ground chicken |
2 garlic cloves, minced |
Directions:
1. Combine all ingredients in a large bowl. Divide the chicken mixture into 12 equal portions, shaping each into a 1/2-inch-thick patty. 2. Heat a large nonstick skillet over medium heat. Add patties; cook 7 minutes on each side or until done. |
