Chicken and Banana Squash Mole |

As published in the Winter 2007 edition of Raley's Something Extra magazine. Ingredients:
4 cups banana squash, peeled and cubed |
3 large boneless skinless chicken breasts, cubed |
1 cup mole, sauce (like knorr) |
1/2 cup canned diced tomatoes with green chilies |
Directions:
1. Combine squash, chicken, mole sauce and tomatores in a medium saucepan. Bring to a boil and simmer, covered for 30 minutes or until squash is tender. |
