Chicken and Apples in Cream |

Ingredients:
2 tablespoon(s) unsalted butter |
1 large leek washed and finely chopped |
2 tart apples - granny smith - cored, peeled, and thinly sliced |
2 tablespoon(s) flour |
1 teaspoon(s) salt |
1/4 teaspoon(s) pepper |
1 cup(s) chicken stock |
1/2 cup(s) heavy cream |
few drops of fresh lemon juice |
4 cup(s) shredded cooked chicken |
1 tablespoon(s) finely chopped fresh chives |
Directions:
1. Heat the butter in a large skillet over medium heat and cook the leeks, stirring until softened and beginning to brown, about 10 minutes. Add the apples and cook, stirring occasionally, until softened, about 10 minutes. Sprinkle on the flour, salt, and pepper and stir. Cook 3 minutes, then add stock and cream. Cook 3 to 5 minutes, until sauce is thickened. Season with lemon juice, stir in the chicken, and heat through. Sprinkle with the chives and serve |
