This is an easy, elegant dish. I got it from a magazine clipping. The recipe calls for using margarine or butter. I changed this to olive oil. Ingredients:
1 tablespoon all-purpose flour |
1/2 teaspoon salt |
1/4 teaspoon pepper |
2 boneless skinless chicken breasts |
2 tablespoons olive oil, separated |
1/3 cup sliced almonds |
2 tablespoons lemon juice |
Directions:
1. Mix flour, salt and pepper. 2. Coat chicken breasts with this. 3. In a skillet over medium high heat in 1 tablespoon hot olive oil, cook chicken breats until brown and fork tender, about 10 minutes. 4. Remove chicken to a platter. 5. In same skillet over medium heat, in 1 more tablespoon hot olive oil, cook almonds until lightly browned. 6. Stir in lemon juice. 7. Spoon sauce over chicken. |
