This is a Lancaster County version of Chicken & Biscuits/Dumplings. It's very tasty, quick & easy. ENJOY! Ingredients:
1 onion, chopped |
3 tablespoons butter, melted |
3 teaspoons flour |
1/2 teaspoon salt |
1 1/2 cups chicken broth |
2 cups cooked cubed chicken |
1 cup peas, cooked |
1 cup carrot, cooked (you may substitute 1 small pkg. frozen peas & carrots if you wish, cooked) |
1 package biscuit |
Directions:
1. Saute onion in butter. 2. Blend in flour& salt. 3. Add broth. 4. Cook& stir until thickened. 5. Add chicken& vegetables. 6. Heat until bubbling. 7. Pour into casserole dish. 8. Cut biscuits into fourths, and place on top of casserole. 9. Bake at 425 for 8-10 minutes. |
