Ingredients:
1 (2 1/2- to 3-pound) broiler-fryer, cut up |
1/4 cup olive oil |
1 (6-ounce) can button mushrooms, drained |
1 clove garlic, minced |
1 teaspoon chopped fresh parsley |
1 large tomato, finely chopped |
3 tablespoons lemon juice |
1/2 teaspoon salt |
1/4 teaspoon pepper |
Directions:
1. Brown chicken on all sides in hot oil in a large skillet. Add remaining ingredients, stirring well. Reduce heat, and cook, covered, 1 hour or until chicken is tender. |
