Ingredients:
1/2 cup butter |
1/2 cup all-purpose flour |
2 cups chicken broth |
3/4 cup light cream |
2 egg yolks, beaten |
1/2 cup pimiento |
1 cup mushroom, sliced |
1/4 cup green pepper, chopped |
3 cups chicken meat, diced, blanched |
2 tablespoons sherry wine |
salt |
black pepper |
paprika |
Directions:
1. Melt butter in top of double boiler. 2. Add flour and cook one minute. 3. Add chicken broth and cream. 4. Bring to a boil. 5. Set over hot water and cook for 15 minutes. 6. Remove from heat and add beaten egg yolks, pimento, mushrooms, green peppers, and chicken. 7. Season with sherry, salt, pepper, and paprika to taste. |
