vegetarian delight Ingredients:
2 tbsp olive oil |
1 cup onion, chopped |
3 cloves garlic, chopped |
1/4 tsp hot pepper flakes |
1 tsp oregano |
1 tsp paprika |
1/2 cup green pepper, chopped |
1 cup celery, chopped |
540 g garbanzo beans |
3 1/2 c tomatoes,diced |
2 tbsp tomato paste |
2 c rice, cooked |
Directions:
1. Saute onion, garlic, peppers, celery oregano and hot pepper flakes in a saucepan over medium heat until onion is softened. 2. Add tomato paste and fry a bit. 3. Rinse and drain the garbanzo beans and add to pot along with the tomatoes and paprika. 4. reduce heat and simmer until thickened about 25 mins. 5. Serve over rice. |
