Ingredients:
2 tbsp olive oil
1 cup onion, chopped
3 cloves garlic, chopped
1/4 tsp hot pepper flakes
1 tsp oregano
1 tsp paprika
1/2 cup green pepper, chopped
1 cup celery, chopped
540 g garbanzo beans
3 1/2 c tomatoes,diced
2 tbsp tomato paste
2 c rice, cooked
Directions:
1. Saute onion, garlic, peppers, celery oregano and hot pepper flakes in a saucepan over medium heat until onion is softened.
2. Add tomato paste and fry a bit.
3. Rinse and drain the garbanzo beans and add to pot along with the tomatoes and paprika.
4. reduce heat and simmer until thickened about 25 mins.
5. Serve over rice.
