HILTL is Europes oldest (more than 100 years) vegetarian restaurant with a huge salad buffet. This is my favourite. Ingredients:
320 g chickpeas, canned |
1 tablespoon peanut oil |
2 teaspoons cumin |
1 teaspoon ground cilantro |
1 teaspoon madras curry powder |
2 teaspoons ground turmeric |
1 teaspoon salt |
1 cup water |
1 carrot |
1 small onion |
1 cup plain yogurt |
lemon juice |
1 tablespoon mayonnaise |
1 tablespoon mustard |
Directions:
1. Heat peanut oil in pan and stew cumin. 2. Add all other herbs and turn off heat, then add water. 3. Grate carrot and onion, mix with yogurt, lemon juice, mayonnaise, mustard and chick peas. |
