This is a simple salad for when you're looking for something a little different from the same old side salad. Ingredients:
2 15 oz. cans chickpeas, drained and lightly rinsed |
1/2 cup extra virgin olive oil |
2 teaspoons coarse sea salt |
1 teaspoon freshly ground black pepper |
1/4 cup fresh squeezed lemon juice |
2 cloves garlic finely minced |
2 cups fresh spinach leaves, washed, dried, and minced |
Directions:
1. Mix everything together in a bowl with a lid - preferably glass - and mix with a wooden spoon. 2. Refrigerate for at least an hour but the longer it marinates together the better it is. 3. Keep up to 5 days 4. Enjoy - YUMMY! |
