This is the third in a series of interesting and, to some, bizarre delicacies from Mexico. In particular, the Northeast region of Mexico along the Texas border. Ingredients:
1 lb raw pork rind (chicharron) |
1/2 cup water |
1 tablespoon tomato paste |
1 red jalepeno or other red chili pepper diced. |
1/4 cup of diced onion |
salt to taste |
Directions:
1. Rinse and Drain the Raw Pork Rind. 2. Heat up 2 tablespoons of oil in a skillet on medium high heat. 3. Place the pork rind in the skillet and stir-fry for 5 minutes. 4. Add the Diced Onion and stir-fry for another 5 minutes until the Onions are tender. 5. Add the Water, Tomato Paste, and Jalepeno and stir to combine. 6. Bring the Mixture to a boil and reduce the heat and simmer for 5-10 minutes until the volume has reduced by half. 7. Salt to taste. 8. Serve on warm flour tortillas as a breakfast taco! The Pork Rind will be tender and delicious! |
