This is a Mexican dish that I got from a Hispanic guy that works in the shop at my office. Very simple and very addictive Ingredients:
6 tomatos |
1 medium jalepeno |
2 tbs minced garlic |
1 bunch cilantro |
1 medium round onion |
1 1/2 lbs cubed pork |
5 cups unseasoned pork rhines |
salt to taste |
pepper to taste |
12 six inch corn tortilla's |
6 tbs olive oil |
3/4 c water |
Directions:
1. Boil tomato's and jalepeno 2. Remove skins from tomato's 3. Cut open jalepeno and remove seeds 4. Place tomatos, pepper, cilantro, round onion, salt and pepper in food processor and blend well 5. Heat oil in 12 inch nonstick skillet 6. Brown cubed pork on both sides 7. Add mixture to skillet with cubed pork 8. Add water to mixture and simmer for 5 minutes 9. Add pork rhines (chicharron's) and simmer for 10 more minutes 10. Serve on warm corn tortillas and add your favorite toppings, i.e. sour cream, cheese, lettuce 11. Serve with rice, black beans or refried beans |
