Chicharones Pork Rinds And Eggs |

One of my favorite breakfest to make. I serve with flour tortillas, refried beans and hot sauce. Ingredients:
half bag of pork rinds (plain) |
4 eggs |
1/3 cup chopped onions |
1 can rotel tomatoes (medium or hot, whatever your taste is) |
vegetable oil |
1/2 cup water |
salt |
pepper |
garlic powder |
Directions:
1. Crack eggs in bowl and whisk 2. In a large skillet, pour enough oil to lightly coat pan 3. Saute onions until soft 4. Add eggs and cook until scrambled 5. Take half bag of pork rinds and put in skillet (can break the rinds in half if large) 6. Add the can of Rotel 7. Add water 8. Add seasonings 9. Simmer until rinds are soft |
