Chia seeds are a wonderful alternative source of omega-3 fats, fiber, and energy. This easy pudding is similar to tapioca. It can be served warm. Add fresh fruit for a nice twist. Use whatever dried fruit you prefer for topping. Ingredients:
2 cups milk |
2/3 cup chia seeds |
1 tablespoon white sugar |
1/2 teaspoon vanilla extract |
2 tablespoons unsweetened coconut flakes (optional) |
2 tablespoons raisins (optional) |
Directions:
1. Combine milk, chia seeds, sugar, and vanilla extract in a bowl; let sit about 10 minutes. Stir the mixture, cover the bowl with plastic wrap, and refrigerate 8 hours to overnight. 2. Top the pudding with coconut and raisins to serve. |
