Chia Ocotea Baked Oatmeal |

I was trying to make a hardy nutritious school snack for my son and came up with a delicious baked oatmeal. It is great both warm or chilled! Ingredients:
1 cup cooked steel cut oats |
1 1/4 cups almond meal |
1 egg |
5 tablespoons butter, softened |
1/2 teaspoon vanilla |
1/4 teaspoon baking soda |
1/4 teaspoon cream of tartar |
1/2 cup maple syrup |
1/4 cup chia seeds |
1/4 cup yogurt |
3 drops ocotea young living essential oils |
Directions:
1. Preheat oven to 350 degrees. Beat together butter, egg, vanilla, syrup and yogurt. Add remaining ingredients. Pour into a greased 8X8 pan or two smaller ones for a thinner serving. Bake for 25-30 minutes until browned. Set aside to cool for 5-10 minutes and serve plain or with milk and walnuts. |
