Chi Chis Oven Fried Chicken |

A friend sent me a cookbook in PDF form on the computer and in it was this recipe. I have never been to a ChiChi's Restaurant but this sounds wonderful and oh so easy! Ingredients:
1 cup flour, seasoned with salt and pepper |
1 cup salsa |
1 egg |
2 cloves garlic, minced |
2 cups crushed cornflakes |
2 teaspoons chili powder |
2 teaspoons cumin |
1 teaspoon oregano |
crushed red pepper to taste (optional) |
2 1/2 pounds chicken thighs |
6 tablespoons butter, melted |
Directions:
1. Preheat oven to 375 degrees. 2. Rinse and dry chicken thighs thoroughly. Combine 1 cup flour with salt and pepper in a plastic bag large enough to shake chicken pieces. Toss in chicken pieces and shake. 3. In a shallow dish, whisk together taco sauce, egg and garlic. 4. In a plastic or paper bag, combine cornflakes, chili powder, cumin, oregano and crushed red pepper, if using. 5. Remove chicken pieces from flour mixture and dip chicken in sauce; toss in cornflakes mixture; place on a greased shallow baking pan. Drizzle with butter; bake 45 minutes or until golden and tender, and juices run clear. |
