Chewy Spiced Oatmeal and Cashew Cookies |

I try to pretend these cookies are healthy. Oats are healthy, right? Believe me on the black pepper. You won't taste it, but it leaves a slight (very slight) tingle in your mouth, and brings out the flavour of the other spices. Ingredients:
225 g butter |
200 g caster sugar |
200 g dark brown sugar |
2 eggs |
1 teaspoon vanilla |
250 g flour |
1 teaspoon bicarbonate of soda |
1 teaspoon salt |
1 1/2 teaspoons cinnamon |
1 1/2 teaspoons ground ginger |
1 teaspoon fresh ground black pepper |
270 g rolled oats |
150 g chopped cashews |
Directions:
1. Pre-heat oven to 190°C. 2. Cream the butter and two sugars until fluffy. 3. Beat in the eggs one by one and add the vanilla. 4. In a separate bowl, mix together the flour, bicarbonate of soda, salt, cinnamon, ginger and pepper. 5. Stir this mix into the butter mixture. 6. Stir in the oats and cashew nuts. 7. Chill for an hour in the fridge, then spoon golfball-sized balls of mixture onto a baking sheet and bake for 8-10 minutes. 8. When ready, remove from the oven and allow to cool for 5 minutes before removing them from the baking sheet onto a cooling rack. |
