Chewy Peanut Butterscotch Fudge Squares |

I found this recipe in an old Nestle Toll House cookbook and my mouth was watering as I read it. Each ingredient made it sound that much more decadent! Ingredients:
crust |
2 tbsp butter |
2 cups mini marshmallows |
1/4 cup peanut butter |
3 cups toasted rice cereal |
fudge |
1/4 cup butter |
2/3 cup evaporated milk |
1 1/2 cups granulated sugar |
1/4 tsp salt |
2 cups mini marshmallows |
1 1/2 cups nestle butterscotch flavored morsels |
3/4 cup peanut butter |
1 tsp vanilla |
chopped peanuts |
Directions:
1. For crust: 2. Melt butter over low heat in medium, heavy sauce pan. 3. Add marshmallows and peanut butter and stir until melted. 4. Remove from heat. 5. Add cereal, stirring until coated. 6. Press onto bottom of buttered 13 x9 baking pan. 7. For fudge: 8. Combine butter, evaporated milk, sugar and salt in medium, heavy sauce pan. 9. Bring to a full rolling boil over medium heat, stirring constantly. 10. Boil for 3 to 4 minutes, stirring constantly. 11. Remove from heat. 12. Add marshmallows, morsels, peanut butter and vanilla; stir vigorously for 1 minute or until marshmallows and morsels are completely melted. 13. Pour over prepared crust. 14. Sprinkle with chopped peanuts, press in lightly. 15. Chill until set. |
