Ingredients:
1/2 cup butter, softened |
1/2 cup lard, softened |
1 cup sugar |
1 cup firmly packed brown sugar |
2 eggs |
2 cups all-purpose flour |
1 teaspoon baking powder |
1 teaspoon baking soda |
1 teaspoon salt |
1 1/2 cups quick-cooking oats, uncooked |
1/2 cup chopped pecans |
1/2 cup flaked coconut |
Directions:
1. Cream butter and lard in a large mixing bowl; gradually add sugar, beating well. Add eggs, and mix well. 2. Combine flour, baking powder, soda, and salt in a small mixing bowl; add to creamed mixture, stirring until well blended. Add oats, pecans, and coconut, mixing well. 3. Drop by heaping teaspoonfuls 2 inches apart onto lightly greased cookie sheets. Bake at 350° for 6 to 8 minutes. Remove from cookie sheets, and cool on wire racks. |
