These are the real deal, the chewy crispy goes-to-your-head molasses cookie that you can't buy. Each one calls to the next. Crackled brown tops with sugar crystals...
Ingredients:
3/4 c butter
1 c sugar
1/4 c molasses
2 t honey
1 egg
2 t baking soda
2 1/4 c flour
1/4 t ground cloves
3/4 t ground ginger
1 1/2 t cinnamon
Directions:
1. Melt butter.
2. Mix in sugar, molasses, and honey. Beat very well.
3. Add egg. Beat very well. Mixture will be rather runny.
4. Add baking soda, flour and spices and mix thoroughly.
5. Chill dough at least 15 m.
6. Preheat oven to 350 degrees.
7. Shape dough into balls the size of small walnuts and roll in sugar.
8. Place on greased/silpat/parchment paper lined baking sheet about 2 apart.
9. Bake at 350 degrees 7-8 minutes, rotating the cookie sheet halfway through.
10. Take out of the oven when they have puffed and the tops are set-do not overbake!! Cool 2-5 min on the cookie sheet, then remove to a cooling rack. If they are too hard, bake in a cooler oven, say 340, or watch them more closely. If they are too cakey, use 2 T less flour (next time, obviously).
11. Store in an airtight container. The butter will keep them from sticking to each other :-)
