People who don't like molasses cookies adore these. The cookies don't look impressive, but the butter brings it all together. Ingredients:
prep time includes chilling time and shaping time. |
3/4 c. butter, melted |
1 c. white sugar |
1/3 c. molasses |
1 egg |
2 t. baking soda |
2 c. all-purpose bleached flour |
1/4 t. ground cloves |
3/4 t. ground ginger |
2 t. ground cinnamon |
white sugar for rolling |
Directions:
1. Stir sugar and molasses into melted butter and beat until thick and smooth. 2. Add egg and beat thoroughly. 3. Add dry ingredients and mix until well blended. 4. Chill dough at least 2 hours. 5. Shape dough into balls the size of small walnuts and roll in the additional sugar. 6. Place on baking sheet lined with non-stick sheet, 2 apart. 7. Bake at 350 degrees 7-8 minutes. 8. Do not overbake. 9. Cookies are done when they are puffed and cracked but not firm. 10. Let rest on baking sheet an additional 2 minutes, and remove from sheet to cool on a rack. |
