Ingredients:
2 cups sugar |
1 1/3 cups vegetable oil |
1 (14 ounce) can sweetened condensed milk |
1/2 cup molasses |
2 large eggs |
4 1/2 cups all-purpose flour |
3 tablespoons ground ginger |
2 teaspoons baking powder |
1 teaspoon salt |
1 teaspoon cinnamon |
3/4 cup chopped crystallized ginger |
Directions:
1. In large bowl; stir together sugar, oil, sweettened condensed milk and molasses. 2. Whisk in eggs, one at a time. 3. In another large bowl, stir together flour, ground ginger, baking powder, salt and cinnamon. 4. Slowly stir flour mixture into milk mixture; stir in ginger. 5. Cover and refrigerate 2 hours or until chilled. 6. Heat oven to 350°F. 7. Roll dough into 1-inch balls; place on greased or parchment-lined baking sheets. 8. Bake 12 minutes or until edges begin to brown slightly. 9. Cool on baking sheets 2 minutes to allow cookies to firm up slightly. 10. Cool completely on wire racks. |
