Chewy Double Ginger Squares |

These tasty squares get a double hit of ginger from ground ginger and crystallized ginger. They taste better after sitting for a day or two. From FoodTV.ca. Ingredients:
1 cup brown sugar, packed |
1/2 cup molasses |
1/4 cup butter, melted |
2 eggs |
1 teaspoon vanilla |
2 cups all-purpose flour |
1 teaspoon ground ginger |
1/2 teaspoon baking soda |
1/2 teaspoon ground cinnamon |
1/4 teaspoon ground cloves |
1 pinch salt |
1/2 cup crystallized ginger, chopped |
1 cup icing sugar |
1/4 cup butter, melted |
2 tablespoons lemon juice |
Directions:
1. Preheat the oven to 350 degrees F. 2. Grease a 13 x 9 cake pan; line with parchment paper and set aside. 3. In a bowl, whisk together the sugar, molasses, butter, eggs, and vanilla. 4. In a separate bowl, whisk together the flour, ginger, baking soda, cinnamon, cloves and salt. 5. Stir into the butter mixture until combined. 6. Stir in the crystallized ginger and scrape into the prepared pan. 7. Bake in the centre of the oven until a cake tester inserted in the centre comes out clean, about 40 minutes. 8. Let cool in the pan on a rack for 45 minutes. 9. To make the glaze, stir together the icing sugar, butter and lemon juice. 10. Spread over the squares while still warm. 11. Let cool completely and cut into squares. |
