Chewy Double Ginger Squares |

Deliciously chewy and gingery! I love this-it's like ginger snaps but chewier :P Ingredients:
1 cup packed brown sugar |
1/2 cup molasses |
1/4 cup butter, melted |
2 eggs |
1 teaspoon vanilla |
2 cups flour |
1 teaspoon ground ginger |
1/2 teaspoon baking soda |
1/2 teaspoon cinnamon |
1/4 teaspoon ground cloves |
1 pinch salt |
1/2 cup crystallized ginger, chopped |
Directions:
1. Preheat oven to 350F (180C).Grease 13-x 9-inch (3.5 L) metal cake pan; line with parchment paper. Set aside. 2. In bowl, whisk sugar, molasses, butter, eggs and vanilla. 3. In separate bowl, whisk flour, ginger, baking soda, cinnamon, cloves and salt; stir into butter mixture until combined. 4. Stir in crystallized ginger, scrape into prepared pan. 5. Bake in centre of oven until cake tester inserted in centre comes out clean, about 40 minutes. 6. Let cool in pan on rack for 45 minutes. |
