Indulge your sweet tooth and not feel guilty! You can sub. fake sugar if you're watching calories. Ingredients:
1 cup sugar |
1/4 cup low fat margarine, softened |
1/4 cup frozen apple juice concentrate, thawed |
2 egg whites |
1 1/2 teaspoons vanilla |
1 1/2 cups unbleached flour |
1 cup quick-cooking oats |
1 teaspoon baking powder |
1 teaspoon baking soda |
1/2 teaspoon cinnamon |
2 cups dried cranberries, coarsely chopped |
1/2 cup chopped walnuts (optional) |
Directions:
1. *Don't dilute applejuice. 2. Preheat oven to 350F and lightly grease cookie sheets. 3. In a large bowl, cream margarine and sugar until well blended. Add apple juice concentrate, egg whites, and vanilla; beat well. 4. In a medium bowl, combine the flour, oats, baking powder, baking soda, & cinnamon. Gradually add to creamed mix. until a soft dough forms. Stir in cranberries (and walnuts if using) . 5. Drop by level tablespoons onto cookie sheets-1 inch apart-bake for 14 minutes or until lightly browned. Remove to cooling rack. 6. Enjoy with a glass of low fat milk or hot chocolate! |
