Simple and delicious. Always a part of the Christmas package. Ingredients:
2 2/3 cups sweetened flaked coconut |
2/3 cup sugar |
1/3 cup flour |
1/4 teaspoon salt |
4 egg whites |
1/2 teaspoon almond extract |
2 ounces semisweet chocolate |
1/2 teaspoon shortening |
Directions:
1. Preheat over to 325. Line cookie sheets with parchment. 2. In a medium bowl toss together coconut, sugar, flour and salt. Stir in egg whites and almond extract until well blended. (Mixture will be thick and sticky.). 3. Drop by rounded teaspoonfuls 2 inches apart on baking sheets. Bake in preheated oven for 20-25 minutes or until edges are lightly browned. Cool for 2 minutes before moving to wire racks. Cool completely. If desired in heavy saucepan melt chocolate and shortening; drizzle chocolate mixture over cooled cookies. |
