Chewy Coconut-Macadamia Nut Cookies |

Great for holiday cookie trays. Ingredients:
1 cup butter, softened |
3/4 cup sugar |
3/4 cup firmly packed brown sugar |
1 teaspoon vanilla |
2 eggs |
2 1/4 cups all-purpose flour |
1 teaspoon baking soda |
1 teaspoon cinnamon |
1/2 teaspoon salt |
1 cup old fashioned oats |
1/2 cup shredded coconut |
1/2 cup coarsely chopped macadamia nuts |
Directions:
1. Heat oven to 375. In large bowl, combine butter, sugar and brown sugar; beat until light and fluffy. Add vanilla and eggs; beat until smooth. 2. Lightly spoon flour into measuring cup; level off. Add flour, baking soda, cinnamon and salt; mix well. 3. Add oats, coconut and nuts; blend well. 4. Drop dough by rounded teaspoonfuls 2 inches apart onto ungreased cookie sheets. 5. Bake at 375 for 8 to 10 minutes or until golden brown. 6. Cool 2 minutes. Remove from cookie sheets. |
